These recipes from Chris Ross,executive chef at Louisville’s Bristol Bar & Grille, will set you up for some seriously spectacular snacking.Beer in bread and country ham as spread? It doesn’t get much more macho than that.
Country Ham Spread
1 cup finely diced country ham
2 teaspoons Dijon mustard
2 teaspoons honey
½ cup mayonnaise
- In a food processor, grind the country ham as fine as it will get. Add the rest of the ingredients and pulse until the ham bits are as small as possible.
- Place in a crock and serve with buttery beer bread.
Note: For a thinner spread, add more mayonnaise.
Buttery Beer Bread
3 cups sifted all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
¼ cup sugar
1 12-ounce can beer
1 stick butter, melted
- Preheat oven to 375 degrees. Whisk together dry ingredients and add beer.
- Spray loaf pan and pour in batter. Pour melted butter on top of the batter.
- Bake for 1 hour.
