Sweet Potato Casserole
3 cups cooked sweet potatoes, fresh or canned
½ cup brown sugar
2 eggs, beaten
½ teaspoon salt
½ stick margarine, melted
½ cup evaporated milk
1½ teaspoons vanilla
Topping
½ cup brown sugar
½ cup plain flour
1 cup chopped pecans
½ stick margarine, melted
1. Mash sweet potatoes. Add sugar, eggs, salt, margarine, milk and vanilla.
2. Put mixture into a 9x9-inch casserole dish.
3. Combine topping ingredients and spread over sweet potato mixture.
4. Bake at 350 degrees for 30 minutes.
