Orange Glazed Sweet Potatoes
Although my sister likes to take credit for this recipe, I’m sure she didn’t dream it up, but found it in one of her numerous cookbooks. My family and I love this dish as an alternative to the typical sweet potato casserole with marshmallow topping (some of us are not marshmallow fans). It’s a wonderfully sweet side that pairs perfectly with either turkey or ham. -Patty, associate editor
Orange-Glazed Sweet Potatoes
8 sweet potatoes, boiled
1 cup brown sugar
2 tablespoons cornstarch
½ teaspoon salt
2 tablespoons grated orange rind
1⁄3 cup sherry
¼ cup butter
1 cup orange juice
1. Peel boiled sweet potatoes and cut into 1⁄3-inch slices.
2. Combine brown sugar, cornstarch, salt, orange rind, sherry, butter and orange juice in a saucepan over medium-high heat until bubbly, stirring occasionally.
3. Layer sliced sweet potatoes in a 1½-2-quart casserole dish coated with cooking spray.
4. Pour cooked mixture over potatoes and bake for 15 minutes at 350 degrees.
